Nightjar Diner Co. really is the black sheep of small-town prairie diners, because we’re not really a diner. We open a little later in the day, our menu is pared down, we have liquor. We’ve taken a look at the small-town prairie diner, and asked, “Where can we innovate? Where can we take the idea of diner food to the next level?”. That’s what excites us.
